Easy And Quick Lemon Meringue Pie

My family’s favorite pie is the Lemon Meringue Pie. I used to make it in a saucepan on top of the stove. This required constant stirring, and I didn’t enjoy making the pie that way. One day, I decided to make it in the microwave, and now I love making this pie. It is so simple to do. I wish I had thought of this long ago.

Ingredients For The Pie

1 ½ Cups Granulated Sugar

3 Tablespoons Cornstarch

3 Tablespoons all-purpose Flour

Dash Salt

1 ½ Cups hot water (I heat the water in the microwave)

3 slightly beaten egg yolks

2 Tablespoons Butter

1/3 Cup Lemon Juice. This can be bottled Lemon Juice, or the juice from two Lemons.

3 egg whites for the Meringue

A baked 8 in. Pie Shell. This can be a shell from the Grocery Store or one you have made. I have a wonderful recipe for a pie crust made with oil. Click on the above link for that.

How Simple Is This??

You really can't get an easier way to make a pie than this: You just put the first four ingredients into a microwavable bowl, add the hot water, microwave for 2 minute, bring it out, beat it, put back in the microwave for another 2 minutes, add a small amount into the beaten egg yolk, return to the microwave for another 2 minutes, bring it out, add the lemon juice and butter, put it back in the microwave for another minute or so. That's it! So instead of standing in front of the stove, and continually stirring for about 15 minutes on medium, this way you have a total of 7 minutes in the microwave, and you're done!

Into a 2 quart microwavable plastic container, Mix together:

The Sugar, Cornstarch, Flour, and Salt

Hot Water Has Been Added

Add Hot Water And Mix

Gradually add the hot water. Mix well. Place in the microwave on high setting for 2 minutes.

Take out and use hand held beater to mix well. Put back in the microwave for another 2 minutes.

3 Beaten Egg Yolks

Mixture Is Added To The Beaten Egg Yolks.

Pour a small amount of the mixture into the beaten egg yolks. Mix this well. Return it to the mixture in the container.

Put it back in the microwave for 2 minutes. It will be slightly thickened at this point. Use the hand held beater to make sure there are no lumps.

Add the Lemon Juice and Butter.

Put back in the microwave for 1 minute.

Beat well with the hand held beater till nice and smooth. The mixture should be very thick at this point.

Make The Meringue

Make The Meringue For The Lemon Meringue Pie

Make the Meringue by beating the 3 egg whites until you have nice peaks. Add about 3 Tablespoons sugar. Egg whites should be at room temperature, and they beat better in a glass bowl, not plastic.

Spread The Meringue On Top Of The Pie

Spread the Meringue on top of the pie, covering the entire pie, making peaks. I like to sprinkle a little sugar on the top just to give the pie some sparkle.

Bake Pie In Oven Till Meringue Is Browned

Bake in oven at 350 degrees for 12-15 minutes, or until golden brown on top.

Cool in Refrigerator for at least an hour before you cut the pie. It will be nice and firm, and hold it’s shape when cut.

We have microwaves in Latvia but we have a rather little kitchen with not much counter space so we opted for a convection type electric oven and that's what we use more than our gas stove. This oven also cooks pretty quick like a whole chicken of course depending on size anywhere from 45 minutes to one hour.

Hello Sueswan, you could use this same recipe, just mix everything together and cook on med. heat till it's thick. Pour some into the egg yolks and return to med. heat till thick. I used to do it the conventional way till I discovered this way.
