Yields: about 52 balls

This is a recipe for Chocolate/ Pecan balls that are dipped into melted chocolate. This recipe should yield about 52 inch balls.

You will need:

To make the candy balls:

2 Sticks of Softened Butter

4 Cups of Confectioner’s Sugar

1 Can Eagle Brand Milk

2 Teaspoons Vanilla Extract

2 Cups Chopped Pecans or Walnuts

Cream the Butter and Sugar until well blended. Add the Nuts, Flavoring, and the Milk.

You want stiff dough at this point. Take off your rings, wash your hands and dig in the dough to make 1 inch balls. Refrigerate overnight.

Ingredients For The Chocolate Dip

For the chocolate dip you will need:

Unsweetened Chocolate (I use Bakers)

Paraffin

A wire rack like one you might use for cookies hot out of the oven.

Using a double boiler (if you don’t have one, use a smaller pot inside a larger pot like I did):

Melt 1 square Baker’s Chocolate with just a sliver of Paraffin. You don’t have to add the paraffin, but that makes a nice sheen on the finished candy.

1 square of Chocolate will dip about 15 inch balls.

Use a fork to dip the candy into the melted chocolate. Drain on a wire rack. Keep refrigerated until you are ready to eat them, or give them as Christmas gifts.

These Hand Dipped Chocoate Candies Make Great Christmas Gifts

This is an easy way to hand dip candies. I have done Chocolate Covered Cherries. You would leave out the nuts, place a cherry in the middle of the candy ball and then dip into the chocolate.
