How To Preserve Pecans And Other Nuts In Mason Canning Jars

I preserve Pecans in Mason canning jars. I was lucky enough to receive 6 quarts of Georgia Pecans from my daughter who lives there. These nuts have been processed: in other words; shelled, halved, and cleaned. They arrived a couple of days ago, and I was thrilled because I use a LOT of pecans during the holidays. I got them in time to make my Pecan Pies for Thanksgiving Day dinner. As you can see by my photos they are very plump, beautiful pecans. They would have cost a small fortune in the grocery store!

The first time I heard of baking a cake in a jar I couldn’t believe that would work, but it does. If you are short on freezer space, you can use this method. Mason Jar Canning is NOT just for jams, jellies, and pickles. If you want to send someone a nice home cooked meal, cook it and send it by priority mail preserved in a sealed Mason jar.

I do want to make it clear this method should NOT be used in the place of canning food. It's safe to cook food throughly, and then seal it in a jar.

These jars can be successfully mailed if they are packed well with bubble wrap. Mason Jars are manufactured in several sizes. I used 1 quart jars for this project. When I bake a cake in a jar, I use the half pint size because the cake cooks more evenly. The size of the jar will depend on the food you are preparing to preserve.

Sterilize The Jars And Lids In Boiling Water

Boil the Mason jars and lids for about 10 minutes to sterilize them. Turn them upside down to dry. If you have a large pot you can sterilize serveral jars at once.

Fill The Jars With The Pecans

Fill the jars with the Pecans, leaving about an inch from the top of the jar. Place the jar in the microwave for 2 minutes. This is done to heat the jar, NOT to cook the nuts. As soon as you take the jars out of the microwave, place the top and lid on the jar. Tighten. Listen for the “pop” sound that lets you know the jar is properly sealed. The jar has to be HOT before it will seal.

Hey, The Dirt Farmer. Good to see you. You are right, when you open the jar they are better than if they had been frozen. I've started preserving a lot of food now in Mason Jars. My freezer got too full of meats, etc.

Great tips! This is the country for canning, Everyone cans everything here from cucumbers, to pickles, tomatoes, berries, mushrooms etc. This way a lot of people especially in the country get through the winter.

I love canning things, but had never thought of a microwave technique. I wonder what else could be canned safely using the microwave??? Interesting! Voted up!

Hi pharmacist, I only put the jars in the microwave to heat them so I get a good seal. I wouldn't try and actually can foods using the microwave. I don't think it would be safe. This only works for food products that dosen't have to be sterilized.
